Yields: 2 dozen
Ingredients:
1/2 lb (2 sticks) softened Butter
1 cup firmly packed Brown Sugar
1/2 cup Granulated Sugar
2 Eggs
1 tsp Vanilla
1.5 cups All-Purpose Flour
1 tsp Baking Soda
1 tsp Ground Cinnamon
1/2 tsp Salt
3 cups Old-Fashioned Oats
1 cup Raisins
Instructions:
- Preheat oven to 350 degrees.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy.
- Add the eggs and vanilla and beat well.
- In a small bowl, mix the flour, baking soda, cinnamon, and salt.
- Slowly mix the flour mixture into the butter mixture.
- Stir in the oats and raisins.
- Drop tablespoons of the batter onto an ungreased cookie sheet.
- Bake 10-12 minutes or until golden brown.
- Cool 1 minute on the sheet, then move the cookies onto a wire rack.
- Once completely cooled, store in an airtight container.
Oatmeal cookies are one of my ultimate comfort foods, and, now that I am a breast-feeding mom, a dietary staple. (Oatmeal is supposed to help milk production. Who knew?) Eating oatmeal for breakfast every morning gets old, though. And so, I try and fit in oatmeal other ways.
